My favorite seafood for dinner parties is Grilled Shrimp Kabobs. This meal requires very little preparation time, but is fun and for all your guest to participate in the assembly and cooking of the Kabobs. Top it off with a nice mature bottle of Pinot Noir, whose smokiness and its delicacy of aroma and light texture matches nicely with the grilled flavor of the shrimp, and you will have a dinner that will not soon be forgotten.

You will need:

2 cans of pineapple chunks (retain juice for basting) or one fresh pineapple cut into 1″ squares plus one can pineapple juice.

1/2 pound sliced bacon cut in 2″ pieces

2 bell peppers (any color) cut in 1″ pieces

1/2 pound fresh mushrooms

1 pint cherry tomatoes

1 cup soy sauce

1 cup sweet and sour sauce

This recipe calls for 2 pounds of shrimp and will make 18 to 20 kabobs. Marinate the shrimp in the soy sauce for about 2 hours in the refrigerator. Cut all other ingredients into the proper size just before your guest start to arrive.

Set up an the assembly on your table with the shrimp in a large bowl in the center with all the other ingredients to build your kabobs in bowls around the shrimp. Give each guest their own skewers and have everybody make their own kabobs. They need to be grilled on top of foil for 8 to 10 minutes. They should be turned often and can either be basted with sweet and sour sauce or pineapple juice.

When the Kabob’s are done pour everyone a glass of Pinot Noir and settle in for an evening of good food and conversation with friends.
