Chinese recipes for a dinner party that won’t keep you in the kitchen, instead of with your guest, are difficult to find, because most of them end with, “serve immediately.” However, this complete Chinese dinner has an appetizer, a main course, fried rice and a dessert, which can be prepared ahead of time and reheated. You can even do all the prep work for the fried green beans ahead of time.

Appetizer-Fried Won Ton with Dipping Sauce

*Fried Won Ton* Serves 6

6 medium shrimp, peeled, deveined, chopped fine

1 lb. finely ground pork

1 small can water chestnuts, drained and coarsely chopped

3 tbs. ginger, minced

2 tbs. green onions, minced

2 tbs. soy sauce

1 tbs. rice wine

1 1/2 tbs. sesame oil

2 tbs. cornstarch

40 won ton wrappers

cornstarch

oil for cooking

1-Heat oven to 200 degrees

2-Combine first 3 ingredients and mix well.

3-Add next six ingredients and mix well. Mixture will be stiff.

4-Place 2 teaspoons of mix in center of a won ton wrapper.

5-Moisten edges of wrapper with water, pull four corners up, and pinch together.

7-Place won tons on a wax paper dusted with cornstarch until ready to fry.

6-Add enough oil to wok to cover won tons and heat to 350 degrees.

8-Fry a few at a time, turning constantly for about 6 minutes until golden brown.

9-Drain on paper towels. Place on serving plate and keep warm in oven.

10-Allow oil to reheat and fry the next batch.

*Dipping Sauce*

3 tbs. soy sauce

1 tbs. brown sugar

1 tbs. Worcestershire sauce

2 tbs. water

1 tsp. hot chili paste

1 tsp. ginger, minced

Combine all ingredients and mix well. Serve at room temperature.

*Chinese Pork Roast* Serves 6

4 1/2 tbs. soy sauce

1 tsp. sesame oil

3 tbs. white wine

5 tbs. hoisin sauce

2 tbs. minced garlic

3/4 cup sugar

4 1/2 tsp. oyster sauce

1 1/2 tsp. ground ginger

3 tablespoons Chinese bean paste

6 shallots (diced)

2 3-pound pork loin roast

4 1/2 drops red food coloring

6 tbs. honey

1-Combine first ten ingredients in a large bowl.

2-Add the loins and coat well with marinade. Cover and refrigerate for about 3 hours.

3-Preheat oven to 425 degrees.

4-Place loins on a rack in roasting pan and roast for 15 minutes.

5-Turn the loins and return to oven for about 7 minutes longer.

6-Mix food coloring and honey well. Brush on the loins
