One of my favorite things at Thanksgiving and Christmas dinner as I was growing up was the Cranberry molded salads. I can’t remember a Thanksgiving or Christmas dinner that there was not a molded cranberry salad of some kind. Some put celery and shredded carrots in them but I always preferred the ones with fruit. This recipe was always one of my favorites, and I made it for Thanksgiving dinner this year.

MOLDED CRANBERRY FRUIT SALAD

1 8 oz can crushed pineapple, drained, reserve the liquid

1/2 cup cranberry juice cocktail

2 tbsp lemon juice

1 3 0z package of raspberry jello

1 16 oz can of whole berry cranberry sauce

1/2 cup chopped walnuts

Combine reserved pineapple juice, cranberry juice cocktail and lemon juice in a saucepan. Bring to a boil. Remove from heat. Add gelatin, stirring until it is completely dissolved. Break up cranberry sauce with a fork and stir into the gelatin mixture.

Refrigerate until the mixture begins to set up. Stir in the pineapple and walnuts. Pour into a 4 cup jello mold. Chill until firm. Serve plain or with whipped topping.

I sometimes replace the pineapple with mandarin orange segments and use blackberry jello and pomegranate juice in place of cranberry juice. Use you imagination and come up with a new sensation of your own,
