There are just as many Chinese Chicken Salad recipes out there as there are favorite, chicken salad, egg salad or shrimp salad recipes. I really enjoy experimenting with chicken salad recipes and I have found several different ways to make Chinese Chicken Salad over the years. I will offer you three of my favorites, two cold and one warm. Chinese Chicken Salad is a terrific change on the old stand by chicken salad, and it is also a great way to use up leftover chicken breast for a more thrift dinner choice.
Chinese Chicken Salad #1
Ingredients
1/2 lb snow peas
1 lb head Napa cabbage, cored and cut into wide strips
1-lb head of romaine lettuce, torn
1/4 cup soy sauce
1/4 cup fresh lemon juice
2 tablespoons sugar
1 tablespoon distilled white vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon sesame oil
1/4 cup vegetable oil
6 cups shredded cooked chicken
1/2 cup chopped green onions
1/2 cup chopped fresh cilantro
1/2 cup sliced almonds, toasted
2 tablespoons sesame seeds, toasted
Directions
1. Cook snow peas in boiling salted water about 1 1/2 minutes and then transfer to ice water to shock. Cut the snow peas diagonally thin strips and place in large salad bowl with cabbage and romaine.
2. In a small bowl, mix soy sauce, lemon juice, sugar, vinegar, salt, and pepper together. Add sesame oil and vegetable oil in a slowly while whisking until all is dissolve and the dressing is emulsified.
3. In another bowl, toss the chicken and green onions with 1/3 cup of dressing.
4. Add the remainder of the dressing to the cabbage, romaine, and snow peas until coated.
5. Add the chicken and the cilantro, almonds, and sesame seeds to the lettuce mixture.
6. Serve immediately.
Garnish
For something crunch and extra special, get about 15 wonton wrappers and cut into inch strips, fry the strips in hot oil until golden and drain. Toss the wonton strips on top of the salad.
