This is an ideal recipe for those who love a nice creamy soup but don’t want all the fat and calories from a traditional cream soup.
Creamy Cauliflower Soup
Ingredients: 1 head of cauliflower, 1 thinly sliced small onion, 2 cloves of crushed garlic, 4 low sodium chicken bullion cubes, 1 half cup of milk (use low fat milk if you like), 1 quarter cup of grated Parmesan cheese (optional, but very tasty), salt and pepper to taste.
Preparation: Clean and cut up cauliflower into chunks and put into a 2-quart saucepan and cover with water. Add onion, garlic, bullion cubes. Boil thoroughly, until cauliflower is very soft.
When cooked, let stand to cool then transfer to a blender. Add Parmesan cheese and blend until smooth. Transfer the soup back to saucepan and reheat before serving.
This basic soup can be garnished with any number of things. Try a sprinkle of crabmeat, bacon bits, your favorite cheese or a chiffonade of fresh herbs. You are limited only by your imagination.
