Eggplant Yogurt
My husband is from Pakistan and after waiting three years for him he arrived here in July. We love to cook and try new recipe’s. This one was given to him by his sister in law.She is Afghani so I am not sure if it is Paki or Persian or Afghani but its good.
One Eggplant sliced (not too thick but not too thin)
Fresh crushed garlic ( we use about 8, we loooovee garlic)use to ur taste
Yogurt( Mountain High or Arabic style is best)
1 small pepper chopped (green chili or ur favorite)(or use pepper flakes)
salt
oil
First prepare Yogurt by placing about 2 to three cups in a bowl and adding fresh garlic (about half)
Place enough oil in a skillet for frying eggplant.
sprinkle salt on eggplant
Brown eggplant on each side and drain then place on large platter
cover bottom with eggplant , then spread yogurt, layer with more eggplant and yogurt in layers ending with yogurt.
then to some of the oil you fried eggplant with add fresh garlic and pepper until brown.
top yogurt eggplant with the oil .
serve with Naan, Roti, or pita bread.
pulling apart bread in small pieces and using like a spoon. or if your still in western mode u can use a spoon.
