I watch TV not very often but yesterday I saw a Mexican recipe for a very short time. I was not able to remember all the recipes and because of that reason I replaced some of them. I tried the recipe and it was delicious.
Ingredients:
1 cup white rice
1 onion chopped
5 garlic cloves
3 tablespoons oil
3 cups tomatoes
1 large bunch cilantro
3 poblano chiles seeded and chopped
1 pound crab meat
1 cup stock (preferably fish stock)
1/2 cup white wine
salt to taste
parsley
yellow cheese for garnish
Method of preparation:
Put the rice into a bowl and pour in boiling water. Leave the rice there for 30 minutes. Drain it after that.
Put the tomatoes into a food processor or grate them until smooth. Add the chopped ciliantro, the chopped onion, chiles and garlic to the tomato puree. In a large saucepan filled with heated oil add the rice and fry it for 5 minutes by constant stirring. Then stir with the tomato mixture which is mixed with the crab meat, stock and wine. Add salt. Cook about 20 minutes until absorbing of the liquid. garnish with ciliantro,parsley and grated yellow cheese. Enjoy it!
