One of my good Navy buddies is from the Ozarks of Southern Missouri and Northern Arkansas. We spent a lot of leave time together before we were each married. His parents ran a little drive inn type eating place and one of the things they served was Beer Batter Deep Fried Dill Pickle Slices. At first I was a little apprehensive to try them but after I did, I became addicted to them. They are really good and after three or four visits I finally convinced “Pop” to give me the recipe. SO here is something other than fries or onion rings to eat with your burgers or hot dogs.

POP’S BEER BATTERED FRIED PICKLES

2 16 0z jars of dill pickle slices (My favorite is the Clausen Kosher Pickle Spears)

1 12oz can of beer (I usually use Guinness)

1 tsp seasoned salt

1 large egg

1 tbsp baking powder

1 1/2 cups all purpose flour

Vegetable oil

Pat the pickles dry with paper towels. Whisk together the egg, beer, baking powder, and seasoned salt. Add 1 1/2 cups of flour and whisk until smooth.

Pour oil to a depth of 1 1/2 inches into a large Dutch oven or heavy skillet. Heat over medium heat.

Dip the dill pickle slices in the batter and fry in batches. Drain them on paper towels.

Serve plain or with your favorite dipping sauce. We like blue cheese dressing with a little garlic salt and tabasco added
