Easy Vegetarian Chili Bake
1 can vegetarian chili
1 can chili beans
2 cups frozen vegetables*
1 package corn bread mix*
Items for corn bread mix (such as milk and eggs)
Oil spray
In a sauce pan heat chili, beans and veggies until warm while preparing cornbread mix. Spray square baking dish with oil spray then add chili mix and top with corn bread mixture. Bake at 400 degrees for 30 minutes.
*Vegetables I like to use include peas, carrots, corn, green beans and diced potatoes.
*I am from Texas and am partial to Jiffy corn bread mix, I have not had any others that even compare. If using Jiffy, I can tell you you will need 1/3 cup milk and 1 egg for mix.
