One pound of ground beef may not sound like much meat, if you are feeding a large family, but with the right recipes, it can go a long way! Here are a few one pounder ideas that are easy to make and taste great! And to make things easy, most of the ingredients are already sitting in your cubbards.

YAK-A-MESHY:

The name is a bit strange but the flavor is outstanding!

Ingredients:

White rice

one pound ground beef

1 can of carrots

1 can of green beans

1 small can of stewed tomatoes

1 table spoon soy sauce

Directions:

In a sauce pan or rice steamer, prepare rice as directed on package. Using a large skillet, brown ground beef completely and drain grease off. Open and drain carrots and green beans. Add all vegetables to the meat. Mix them together throughly. Sprinkle Soy sauce on and mix again. Serve on a bed of rice and enjoy.

“SOMETHING IN A PAN”

My mom always dubbed this one something in a pan but it is basically a homemade hamburger helper. (it just tastes 100 times better).

Ingredients:

1lb ground beef

1 pkg of egg noodles

2 cans of cream of mushroom soup

1/2 cup milk

Directions:

Brown ground beef and then drain grease. Boil egg noodles till tender. When Egg noodles are done, add them to the meat. Pour in cream of mushroom soup and milk. Stir constantly till everything is mixed and allow to simmer for about 3 minutes. Serve.

NOTE” If you have picky eaters that don’t like the mushroom taste you can substitute the cream of mushroom with cream of chicken.

POUR MAN’s MEATLOAF

This is a family favorite that goes a long way.

Ingredients:

1lb ground beef

1/2 a package of saltine crackers

1 egg

1 can of vegetable beef soup.

Directions:

Preheat oven to 375 degrees. In a large bowl, mix meat, soup, and egg together. Crumble all of the crackers well and add in the mix. YOU WILL GET MESSY HANDS WITH THIS! Squish it all together now! Place concoction in a loaf pan and slide it in the oven for 45 minutes.

Tastes great with mashed potatoes and gravy with peas as an additional side dish.
