I’m not a vegetarian but i don’t eat a lot of meat and having 3 children the budget is tight this recipe is quick easy and delicious and very low in fat

ingredients

511 grams potatoes

312g carrots finely chopped

198g peas

2 spring onions

1 egg beaten

salt and pepper

method

Peel the potatoes and cut into small pieces place in a pan of water and boil until tender. Do the same with the carrots and peas. Mash the potatoes and mix with the other veges add the beaten egg and place in a food processor till blended but still slightly chunky.

shape the mix into patties and spray lightly with oil or fry light.

Either grill or pan fry until golden brown serve in a bun with salad
